An Italian chef on Zanzibar’s north-east coast? At Next Paradise Boutique Resort in Pwani Mchangani, he’s a permanent fixture. He reinterprets Mediterranean classics with a touch of Swahili cuisine, and the fish for the seafood dishes is freshly caught. To go with it there are fresh juices made from the island’s tropical fruit. The resort lies on a white, palm-fringed beach, and about one kilometre offshore a coral reef protects the shore.
